2 on Tuesday

Anyway, my two go to meals are Anniversary Chicken and Tacos.

My mom randomly started making Anniversary Chicken (it looks weird to capitalize it but I'm going to go with it) about a year ago. There was no anniversary involved the first time she made it, so I'm not sure where the name comes from. It was love at first bite! Chicken, bacon, cheese, ranch dressing - YUM! When she told me how to make it I thought it sounded kinda gross but it works and it is delicious and super easy. When we have company it is my go to meal because it looks fancy but takes zero effort. Here is the recipe:

Boneless, skinless chicken breasts (1 per person)
Terriaki sauce (important - not soy sauce but the marinade/sauce, I use Kikkoman)
Ranch dressing
Bacon (I use the jars of real bacon pieces)
Shredded cheddar cheese
Green Onions

Preheat oven to 350. Place chicken in an appropriately sized baking dish and brush with terriaki sauce and then the ranch dressing - I don't ever measure, so just use enough to generously cover each breast. Then top with bacon, cheddar cheese, and green onions - in that order. Bake in the over 25-35 minutes until chicken is cooked through and everything is bubbly and ooey gooey delicious. I am in love with my broiler so I usually finish cheese topped anything under the broiler for a few minutes to brown the cheese. Some recipes I have seen call for the chicken to be browned in a pan first but it is much easier and turns out more moist if you do it all in the oven.

Our second go to meal is always tacos. For some reason, maybe to spice things up, we refer to them as burritos from time to time but it is the same thing. We have always used soft taco shells but after Reid was born someone from church brought us tacos with hard shells and I was suddenly very upset we've been eating soft tacos for almost 8 years. I had forgotten how much better hard taco shells are but man let me tell you they rock. The grease from the meat absorbs in to the shell instead of running down your arm and you don't get that unpleasant gummy mess in your teeth like you do with soft shells. And they are saltier, and this girl loves some salt. We top our tacos with shredded cheese, salsa, sour cream, lettuce, and tomato. Sometimes if I feel like going the extra mile I will warm up a can of refried beans and make some Mexican rice. Because we are fancy like that.
