No Noodle Lasagna

I am still eating low carb but I have been missing pasta dishes something terrible here lately.  It's not even that I like pasta that much, but I do like easy, one pot meals and it seems most of them revolve around pasta or rice. I have been doing some pinterest-ing lately and have seen several recipes for no noodle/low carb lasagna.  Most of them seemed really complicated or included some ingredients I knew the critics at my house wouldn't love, so I decided to modify my standard lasagna.  It turned out even better than I had hoped, and after a 12 hour work day the starved husband even said it wasn't bad except for all those vegetables.  He did have seconds!



Here is what I did.

No Noodle Lasagna (Low Carb)
1 lb lean ground beef
1 medium onion, chopped
3 garlic cloves, minced
1 jar spaghetti sauce (I like Newman's Own or Classico)
1 10oz package frozen spinach, defrosted and well drained
1/2 tsp curry powder
1 tsp Italian seasoning
2-3 medium zucchini or 3-4 large yellow squash, or any combination of the two
1 tsp salt
pepper to taste
16 oz cottage cheese
8 oz mozzarella cheese
8 oz cheddar cheese

Preheat oven to 350.  Slice the zucchini/squash into 1/4" or 1/2" rounds (depending on your preference), season with salt and pepper and place into preheated oven for 15 minutes to draw out some of the moisture.  Meanwhile, brown ground beef, onion, and garlic together over medium high heat.  Once meat has cooked through and onions are soft, add the jar of spaghetti sauce, spinach, curry powder, and the Italian seasoning and let simmer for 15 minutes (You want your sauce to be thick because the zucchini/squash will release moisture).  Remove zucchini/squash from oven and place on paper towels to drain.  Once sauce has simmered and zucchini/squash has drained, begin assembly.

In a greased 9x13 pan put down a thin layer of the meat/tomato sauce.  Add 1/2 of the zucchini/squash, followed by another layer of sauce, then 1/2 of the cottage cheese, then 1/2 of the mozzarella cheese and 1/2 of the cheddar cheese.  Repeat zucchini/squash, sauce, cottage cheese, mozzarella and cheddar layer.  Place in oven and bake for 35-45 minutes until bubbly and cheese is brown (I broiled mine the last few minutes to give it a cheesy crust).  Let stand for 10-15 minutes before serving.



Carb loving husband AND three year old approved.  A win for mama!!  (P.S. - Although the green food colored thumb does belongs to me, the bread in the above picture is not mine!
